HTC customer support (Verizon Forum post) has apparently confirmed that Verizon Wireless will provide an Android 2.1 OTA update to the Droid HTC Eris over the next two weeks.

I checked for an update (settings/about phone/system updates) this morning but found none. Please comment if you have recieved the update.
